History
Barrel aging has become a hallmark of quality in the world of spirits. However, in the case of wine, since the 20th century, many wineries have chosen to explore new possibilities by fermenting and aging their wines away from wood: aging in clay jars, fermenting in concrete tanks, and maturing in amphorae…
Furthermore, nowadays, the clarity of a distillate is often associated with its quality, and in many countries, clear spirits are highly popular: aged beverages that are then filtered using various methods to remove any trace of color.
But Tanino Óxido is different: it’s a distillate with that “aged style” but without ever touching wood.
Ingredients
- Sherry wine
- Hops
- Goat yogurt
Tasting Note
Fine, subtle, and elegant. Oxidative, woody, and tannic notes with a lactic aftertaste.
Uses
It has the character of Sherry wines with an oxidative profile but without the tannicity, density, and astringency of barrel-aged spirits.
Cocktails as the main alcoholic base:
- Old fashioned
- Manhattan with dry white vermouth
- Horse's neck
- Bamboo / Adonis
Rectifying alcohol in signature cocktails:
- Negroni with gin.
- Old Cuban with rum (white).
- Whisky Highball with whisky.
