The terroir and variety of our Tomato. La Sierra de la Culebra region (Zamora), with its Mediterranean-continental climate and granite soils, has a significant impact on the production of the tomatoes used for our bottled cocktail. Its hot summers are beneficial for growth, and the amount of sunlight hours during the summer is ideal. During the production months, the nights are cool (there’s a temperature variation of 20 degrees day/night), which causes the fruit to ripen slowly and progressively.

Additionally, our tomato variety has a slow ripening process, requiring patience when cultivating it. It generally ripens in stages, meaning not all the fruits will be ready at the same time. We produce little, but it’s of high quality.

Our Corazón de Buey tomato variety is ideal for this bottled cocktail, as it is highly valued for its particular characteristics in terms of flavor. Its flesh is meaty and juicy yet compact, with few seeds.

It has a very thin skin, making it more delicate compared to other tomato varieties (an advantage in terms of texture), and its taste is very sweet and mild, with a slight acidic touch that balances the palate.

Juice from our emblematic “Corazón de Buey” tomato, prepared with a seafood, fish, and vegetable base, with a touch of cayenne pepper and Sherry vinegar aged in barrels. It also includes wine bases: de-alcoholized Manzanilla from Sanlúcar with roasted garlic, and de-alcoholized red wine from Zamora with cilantro and celery.
